Homemade seitan ‘fried chicken’ burgers

We made vegetarian ‘fried chicken’ from scratch and it was really fantastic. The seitan itself was vegan and based on this recipe for chicken-style seitan which worked a treat. For the coating, we dredged in seasoned flour, then egg, then panko breadcrumbs with mixed herbs stirred through. We deep fried them for a couple of minutes until browned and served in burger buns with cheddar cheese, red onion, tomato, mixed leaves and mayo. Frank’s Red Hot Wings buffalo sauce applied liberally at the table.
