Vietnamese noodle salad (aka bun cha)

I very loosely followed this recipe for vegan Vietnamese noodle salad which I lazily refer to as bun cha, although it isn’t really. This bowl has rice noodles, shallow fried tofu, spiralised carrots marinated in the dressing from the linked recipe, cucumber, peanuts, fried shallots, mixed leaves and a lime wedge to serve.
