Vegan spring veg noodle salad

This is another Meera Sodha recipe. Rice noodles are served with shallow fried tofu, pickled red cabbage, broad beans, peas and peanuts. We subbed frozen edamame for the frozen broad beans. In all honesty I wasn’t in love with this meal, though we did mess up the proportions, halving some ingredients but using the full amount of vegetables which was a bit hard going.
