Quinoa salad with falafels

These are the Great Food brand Moroccan spiced falafel, purchased in Aldi but available elsewhere too I believe. Served over quinoa with red onion and herbs, on top of a bed of mixed leaves, tomatoes and sunflower seeds. All drizzled with a homemade tahini dressing – roughly 1 part tahini, 2-3 parts yoghurt, 1 part lemon juice, 1-2 parts water to thin, garlic, salt and pepper.

Almost vegan – just sub the yoghurt for vegan yoghurt.
