This dish is a favourite and very quick and easy to put together. Put the courgettes in the oven to roast while you boil the pasta. Add some sliced garlic, salt, pepper and chilli flakes to the courgettes a few minutes before the pasta is ready, then add the drained pasta. Drizzle with olive oil, mix and return to the oven for 5 mins or so, allowing the edges of the pasta to brown. Tear fresh mozzarella (room temperature if possible) over the top and serve.
