We wanted to make Meera Sodha’s BBQ jackfruit tacos recipe but couldn’t get hold of everything we needed, so ended up making a couple of substitutions:
- Instead of jackfruit, we cooked and roughly chopped Linda McCartney ‘pulled pork’ burgers
- Instead of avocado we added a sprinkling of grated cheddar cheese (without this it would have been vegan)
- Instead of storebought taco shells we made fresh homemade tortillas, which were excellent! We used this recipe, using oil rather than butter or lard.
The other components were made true to Meera’s recipe, including a from-scratch BBQ sauce, a cashew crema, and blistered sweetcorn. Absolutely delicious and definitely a meal we’ll revisit in the near future.
